While looking at the calendar to plan our meals this morning, I realized that there are only three weeks left of school. I can’t believe it. Big I just started Kindergarten last month, didn’t he? Has it really been 9 months?? Next year is first grade. Where did my baby go??
Oh, sorry, I’m getting a little off subject here!
OK, this week we have a baseball game on Wednesday. Then Big I’s friend party on Friday evening, Saturday is a family friends 6th birthday party, and Sunday is the PTA end of year barbeque. As far as cooking goes, I decided to make it an easy-peasy week.
Monday – Spaghetti with salad
Tuesday – Black Bean Quesadillas (If I finally remember to buy the cheese!)
Wednesday – Pulled pork sandwiches – a carry over from last week
Thursday – Tacos in Pasta shells
Friday – Homemade pizza
Saturday – Fend for yourself
Sunday – Breakfast or Fend for yourself

I am so relieved. We did so much better this week! Now this may be because we had pizza a total of 3, yup 3, times last week. I lurve me some pizza, so it never goes to waste around here!
What did go to waste was some corn. I looked at it all week with intentions to add it to something, but that never happened. Then I thought I would just warm it up and eat it on it’s own. That, also, never happened.
This week we have some chili that definitely needs to eaten up. My Mom has gone on vacation so she gave us some perishables that need to be used up also: a tomato, some yogurt, and some lettuce. (Oohh, maybe I’ll have some lettuce with chili over it for a kind of taco salad. Yum!) I have high hopes that next week’s edition will be picture free!

I can’t believe that we are already in the second week of May. The time before school gets out is just flying by!
This week I have a few goals that I would like to work on.
Goal #27 – Sell used CD’s – I’m actually expecting this to run for a few weeks. I want to at least get started on it.
Goal #52 – Get printed pictures in an album
Goal #61 – come up with a weekly outline of what needs to be done when.
Goal #85 – Paint toes
Misc – Knit for an hour each evening, get tomato plants tied up, put down snail bait.
My plan is to take on all of these goals and post an update the following Sunday, along with the next weeks goals. Hopefully actually posting this commitment will keep me accountable. (No promises though, lol!)
Here’s another great recipe from the Saving Dinner cookbook.
Black Bean Quesadillas Serves 6
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, pressed
1 15-ounce can black beans, rinsed and drained
1 red bell pepper, chopped
2 tomatoes, chopped
½ pkg frozen corn (5 ounces)
12 whole wheat tortillas
1 cup low fat Cheddar cheese, shredded
In a large skillet, add half the oil and sauté the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn. Cook until heated through.
Place a tortilla on a plate or flat surface, sprinkle some cheese over the tortilla. Spoon some of the bean and vegetable mixture over the cheese. Top with another tortilla. Repeat until all of the tortillas are used.
Heat remaining oil in a large skillet over medium-high heat. Place quesadillas in the skillet and heat and flip until both sides are browned.

Oven Fried Mustard Chicken Serves 6
1 ¼ Italian bread crumbs
½ cup Parmesan cheese, grated
½ cup Dijon mustard
6 boneless, skinless chicken breast halves
Preheat over to 350 degrees, F. In a shallow bowl, combine bread crumbs and cheese. In another bowl, place the mustard.
Dip the chicken first into the mustard, then the bread crumbs, then place on a baking sheet, lightly sprayed with oil. Bake for 20 minutes or until chicken is done.
What a crazy weekend we ended up having! Friday night was a fundraiser (that we were able to thankfully get away with not spending any money on over the tickets.) Saturday was Little E’s birthday and we went to Chuck E Cheeses for the afternoon. The boys had a blast! Sunday, you might remember, I couldn’t decide what I wanted for dinner. We ended up getting pizza, again! That’s ok, I really do love it!
This week should be much quieter, with just a baseball game for Big I and a softball game for Mr. D.

I can’t believe I am going to post this. I am so ashamed. We wasted too much food this week.
So bad! There’s the leftover black bean soup that I couldn’t sell to anyone. Then there were two jars 1/2 full of spaghetti sauce. Had I thought about it sooner I would have combined them to go on the spaghetti that we had early in the week. Unfortunately it still would have been wasted because the spaghetti hung around for too long too.
A note about the spaghetti. We ran out of plastic wrap the same day that I went grocery shopping, of course after I got home. I decided not to make a special trip to the store for it. The spaghetti was in a white Tupperware bowl with a blue lid. I honestly think that because we couldn’t see what was in the bowl we didn’t eat it. I just skimmed over it whenever I looked in the fridge and I’m sure Mr. D just plain old forgot what was in there. We now have more plastic wrap thanks to Monday’s shopping trip so I am putting my theory to the test this week.
