4.30.10 Food Waste Friday

Last week I mentioned I had some zucchini to use up.  I did it!  Unfortunately I think part of what I used it up in is going to end up being waste next week.  I made some really healthy whole wheat zucchini muffins and they didn’t turn out so great.  They are a bit dry, so they are edible with some butter, but still not great.  I also put some in my spaghetti sauce so that used up all of it!  Yippee for me!

This week, however, I do have some waste. 

 

That is some leftover salsa from takeout last week.  It’s so good, so I’m not sure why I didn’t use it up.  The other is 1/2 a cut up apple that Big I didn’t finish.  That will go in the compost.  I should have eaten that too, but I just didn’t. 

Right now we are working on some spaghetti that needs to be used up and also some black bean soup.  I don’t have high hopes for the soup.  It probably should already be thrown out, but I’ll give it one more day and mention it to Mr. D.  It’s weird, I made the same soup a while back and we gobbled it up, no leftovers.  I must have done something different because this time, not so great.  Actually, now that I think about it, I used dry beans to start this one, and canned beans last time.  Maybe that’s the difference?

    You can always freeze the spaghetti and/or bean soup for an easy meal on a busy night.

    Thanks for leaving a comment on our site earlier. I think your food waste for a week is pretty good; especially when you compare that to the ‘average’ family!

    Well done for using up the courgettes last week, even though the muffins didn’t turn out great, at least you tried 🙂
